A Rolling Stone..

      On the road again. . . Dave and I love our traveling! When I was a little girl, I use to own a children's atlas book. At 10 years old, it was my goal to one day say that I had visited every state in the US. I would "star" every state I had visited, which back then was only Indiana, Ohio, Michigan and Kentucky. I do not still own that atlas, however last weekend I was able to add another state to the list...Vermont.      For my fiance's new job, we were flown out to Burlington, Vermont for a week. We had never been to that part of the county before. It was beautiful! Miles of rolling hills with the Adirondack Mountains in the distance. We stayed at the Hilton hotel, right beside Lake Champlain.  A sunset view from our hotel room.       The community was very unique. Recipes I enjoy

     For those of you who have been asking for the recipes of my meals lately, here are two. Both of these recipes were found in a cooking magazine. Hope you enjoy! =] Summer Corn Salad Ingredients: 1 Tbsp. lime juice 1/4 tsp. hot pepper sauce 5 tsp. olive oil, divided 1 1/2 cups fresh or frozen corn thawed (I use frozen) 1 1/2 cups cherry tomatoes, halves 1/2 cup finely chopped cucumber 1/4 cup finely chopped red onion 2 Tbsp. minced fresh basil or 2 tsp. dried basil 1/4 cup crumbled feta cheese Instructions: * In small bowl, whisk lime juice, salt, pepper sauce and 4 tsp. of oil- set aside *In large skillet, saute corn in remaining oil until tender. Transfer to a salad bowl. *Add the tomatoes, cucumber, onion and basil to the salad bowl. *Drizzle with dressing and toss to coat. *Let stand for 10 min before serving or refrigerate until chilled. *Sprinkle with cheese just before serving. Wedding Planning

           With the wedding being only 5 months away, there is still a lot to get done and the stress is piling on. This past weekend, however, with the help of my bridesmaids- I found my wedding dress!! It took hours of trying on, and trying on AGAIN, to finally say "YES!" to my dress. I absolutely feel like a princess in it, which every bride should feel on her wedding day. So, now my dress is ordered, the bridesmaid dresses are ordered, the reception hall is booked, the beach house is booked (where the ceremony will be) and the hotel where Dave and I will spend our first night as a married couple- is booked. Onto the little details now, such as: flowers, decorations, the food, the cake, etc etc etc. Ok, not so little. If any of you wonderful girlies want to stop over for Bridal magazines and wine, don't hesitate to call.         Dave and I decided where we will go on our honeymoon as well. It isn't booked yet, but our honeymoon destination will be Italy! Stopping

Mmm mmmm goood!

      Whenever I get some free time, I enjoy looking online or in books for new recipes. I found one that is fast, easy and my family LOVES. For those of you who enjoy cooking, here is the recipe. Enjoy :) Light Quiche Ingredients: 1/2 Cup fat free milk 2 Tbsp. all-purpose flour 3/4 Cup egg product (or for fewer calories- buy egg WHITE product) 1 Cup low fat cottage cheese 2 oz. reduced fat cream cheese (or fat free) 1 Cup shredded sharp cheddar cheese 1/2 tsp. sugar 1/8 tsp. black pepper Hint: This tasty recipe goes so fast, that I usually double the recipe. Instructions: *Preheat oven to 350ยบ F *In medium bowl, gradually whisk the milk into the flour until smooth *Whisk in the egg, cottage cheese, and cream cheese (will not be smooth) *Stir in cheddar cheese, sugar and pepper *Pour mixture into lightly greased 9in pie plate *Bake for 45-50 mins. or until puffed and golden- and knife inserted into center comes out clean *serve immediately Hint: You ca

Eden is ONE!!

2:26 PM     On March 9th our little girl turned ONE!! I can't believe my little baby is a year old now. It really does go by so fast. It's bittersweet. On Saturday March 12, we threw a birthday party for Eden. Family and friends gathered to celebrate and Sweet Pea Palace Photography came and took pictures of the event. Some of the Lattimer family came up from Tennessee and spent the weekend with us. It was such an amazing time! There is nothing better than being surrounded by your loved ones on a special day. Here are a couple pics from the day! More to come!!  A year old =)  A couple days before Eden's party, Dave and I took Eden to get her 1 year photos done. It was a blast! Eden's first time in the SNOW!

7:53 PM: Last Friday,  Dave, Chloe and I took Eden out in the snow for her first time ever!! She wasn't too sure about it. She sat there for a little while, and really enjoyed the taste of the snow. haha. But....then she got tired of it and just wanted to go back inside! LOL. awww :) Later that same day, Chloe and I did some cooking together in the kitchen. We baked a stuffed pork loin and castle shaped cake. Afterwards, all of us watched some episodes of GLEE and played some Guitar Hero. It was a real nice relaxing day with the family.

My First Entry

8:44 AM- I am sitting in bed with a cup of coffee in my hand, waiting for my two little girls to wake up. I've been at it since 5:30 AM this morning. Don't ask me where I have gotten all this energy lately. Anyone who knows me, knows that I am not a morning person. I enjoy sleeping in (whenever motherhood allows me too). But, for some reason, I've been feeling like I just had a 5 hour energy shot before the sun even comes up (although, I still can't turn down the Starbucks cup of coffee, my fiance brewed for me before he left for work).  I guess I just can't shut my brain off. There are too many exciting events up ahead and a lot of planning to get done.      For those of you who don't know, my amazing partner of almost 2 years , David Lattimer, proposed to me on Christmas Eve. After Christmas Eve mass, he took me to the front of our church, got on one knee, and asked me to be his wife. He is such a compassionate, loving man, and we have a beautiful litt
